Our pasta is handmade, as it was in the past. We use the “Senatore Cappelli” ancient durum wheat that we cultivate in our farm in Molise.
The bronze wire-drawing, the low-pressure extrusion and the long drying time (more than 40 hours) preserve the high quality of the semolina.
